
Coming at ya with another easy weeknight favorite. Chicken Burrito Bowls . This recipe is simple, delicious, gluten-free, and it’s all done in the crock pot. Who doesn’t love easy clean up?
I think it’s fair to say that the slow cooker/crock pot is my favorite tool in the kitchen. It is my go to when I want to provide my family with a home-cooked meal but know that our day is packed with activities. I can use it for soups, meats, pastas, etc. And it can be used all year round. Why only save this star for the Fall and Winter months?
Start by placing 3 large chicken breasts in the bottom of your slow cooker. I wish I could tell you how many pounds that is, but ya’ll, I am horrible when it comes to measuring ingredients! I was raised by a mother and grandmother who cooked by taste, so it was “a little of this” and “a lot of that” with a “pinch of something special.” And of course the trusty ole saying “Just taste it.” (Remind me to tell you about the time I added too much cayenne pepper to a Jambalaya recipe! One word for you. H – O – T!)

Add your spices: cumin, chili powder, smoked paprika, salt, and pepper.
Then add 1/2 cup of chicken broth and 1 cup of your favorite salsa. Set your slow cooker on low and allow the chicken to cook for 6 hours.

Our weather here, in Oklahoma, has me anticipating Fall and now I am ready to make all our favorite soup recipes, pull out the Fall decor, and enjoy pumpkin spice everything. Is there a season that just gives you all the feels?


What I like to serve with our Chicken Burrito Bowls happen to be two items my sister-n-law introduced to me. You can find them at Costco in the freezer section. These two items provide extra flavor and ease when putting together this quick meal. I often will add black beans or pinto beans, but left them off tonight since my kids prefer to NEVER eat beans. But you can add whatever you and your family’s heart desires.

3-4 Chicken Breasts
1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp smoked paprika
1/2 cup chicken broth
1 cup salsa
Directions:
- Place Chicken Breasts in slow cooker.
- Add spices, chicken broth, and salsa.
- Set slow cooker on low and cook for 6 hours.
- Shred chicken
